Lina from Rose Creek made us this quick sauce  from last summer’s when I interviewed her for the upcoming tomato book. She freezes cherry and mini Romas at the end of the season, and then they are able to be sliced frozen into the pan after frying sliced onion and garlic. Add herbs and it’s ready! Cooked in their amazing olive oil of course. I thought the would go mushy but they still look amazing after 6 months in the freezer and taste just like fresh
