Artichoke leaf stems

Learned this from a stall holder at Collingwood Children’s Farm Market.
Strip the leaves off the leaf mid-rib, cut into sections, boil for 15 min with lemon juice in the water. Slice thinly when cooked, I then fried with sliced celery, spring onions, mushrooms, add cooked rice. Delicious!
